You can tailor any basic meatball recipe by adding different flavours and seasonings to your ingredients. Try a homemade tomato sauce (opt for low sugar if possible), basil pesto, spicy Mediterranean sauce or different curry pastes. The possibilities are endless!
Ingredients:
Thai Turkey Meatballs
- 3½ tbsp brown rice or rice uncooked
- 190g ground turkey, 93% lean
- ½ tbsp Thai green curry paste
- 1½ tbs fresh coriander (chopped)
- Cooking oil spray
- 180 ml (¾ cup) coconut milk
Garnish
- ½ cup spinach, fresh (chopped)
- Lime
Method:
Preheat oven to 425°F / 220°C
- Cook brown rice according to package instructions. Drain and set aside.
- Mix ground turkey, half of the Thai curry paste and fresh coriander together in a bowl. Leave some coriander aside to garnish at the end.
- Once mixed, use a food scale to measure out 28g of meatballs. Portioning ensures that all the meatballs cook evenly. Spray a baking sheet with cooking oil and add meatballs.
- Transfer meatballs to oven to bake for 15-18 minutes, until cooked throughout (other option is to fry them in a pan)
- Heat a non-stick pan over medium heat, add coconut milk and remaining Thai curry paste. Stir to combine. Bring to a light simmer. Cook for 5 minutes, or until slightly reduced.
- Add in the meatballs.
- Assemble your meals with spinach leaves, rice and then meatballs. Drizzle over sauce. Serve straight away or refrigerate it.
When it’s meatball time, heat this dish all the way through. It can also be enjoyed cold. If you wish, garnish with green onion, coriander and a squeeze of lime.
